Blue cheese has a firm, crumbly texture with blue mold veins throughout. Sharper, earthy flavor, and full bodied, Aged Blue Cheese is aged in caves for 60 days and is slightly more crumbly than the Amish Blue. Crumble some on your favorite salad with chopped walnuts, and apples. Wonderful!

Wiped with a Limburger culture, Aged Brick (AKA Beer Kase or Stinky Brick) is pungent and slightly nutty. Aged Brick is…well…we'll just say it has a strong, tangy flavor and very pungent aroma. Brick cheese with a layer of Limburger culture wiped on the outside then aged for 3-6 months.
Aged Swiss is aged over 18 month. The flavor is strong and nutty. Great for Fondue or Reubens
